Date night tonight! I was alerted to this fact this morning by Happy Wife before she left for work. Ordinarily home-based date night is Wednesday or Thursday. This puts me on the hook for dinner.
The lead I am challenged to follow:
All ingredients locally provided except the chicken and feta. Peas from our garden. Preparation by Happy Wife. Baked-to-crisp prosciutto — TO DIE FOR.
What will I do? I can’t top this. Duplicating it would make me a copycat, a plagiarizer, a fraud!
Maybe I’ll just make her favorite, prepared with my own flair, a kind of Caprese salad — Burrata cheese (hard to find!), heirloom tomato, avocado and fresh basil. Served with EVO and salt. A chilled, unoaked Chardonnay. Yes, that’s what I’ll do.
I’m off to find Burrata. Wish me luck on that. If I can’t find any, I’ll need a chef, and quick.

Couldn’t find Burrata (checked 3 most likely places) so I substituted fresh Mozzarella in the Caprese, and I smoked pork spareribs and finished them on the grill. Paired with Happy Wife’s latest favorite wine, a Chenin Blanc & Viogner blend. I had red. Peanuts in the shell for dessert.
Rod, while I am too late to the dinner game to help you out in this instance, if such a short notice dinner confronts you once again, try this.
Grab a bag of U16 shrimp. I like to get the ones already shelled and deveined. Thaw them if frozen.
You’ll also want a crusty French baguette.
Dice up a generous amount of garlic.
Now grab your cast iron skillet, pour a generous amount of olive oil into skillet and heat it up.
Add garlic to skillet, along with at least 2 teaspoons of red pepper flakes.
Cook shrimp.
After shrimp are cooked, and it won’t take long, set skillet on the table, along with the sliced up baguette, a bottle of Happy Wife’s favorite white wine, and your choice of red wine, and happily share the shrimp while dipping slices of baguette into the skillet together.
The Lovely Melis and I like to serve this with a simple salad of romaine and avocado dressed with lemon and olive oil. It’s a delectable meal.
